We love a good “vacay” beverage on a Friday! You’ve made it to the end of the week, and regardless of whether you are jetting off or not, you should absolutely treat yourself! For those staying put this weekend, you can achieve the experience of sipping cocktails by the pool here in Christchurch with friends and family by making a tasty summer-esque cocktail to enjoy!
Until you’re able to take that summer vacay (or at least until it starts heating up again), we’ll be reliving the summer sun in a chilled glass, and serving it to friends at our next dinner party. Follow the two recipes below for your easiest way to recreate summer vibes yet.
This spicy-sweet throwback is beyond delicious.
Ingredients
60mL spiced rum
30mL vermouth
30mL fresh lemon juice
15mL simple syrup
Directions
Combine all ingredients in a cocktail shaker, and shake. Strain into a rocks glass filled with cubed ice. Garnish with a lemon peel twisted around a flamed cinnamon quill.

Ingredients
2 ripe passionfruit, one scooped, one halved for garnish
75mL Gordon’s London Dry Gin
15mL simple syrup
1 lime
Club soda
Directions
Add the pulp from one passionfruit (including the seeds), gin, simple syrup, and juice of one lime to a cocktail shaker or mixing glass. (Note: We like our drinks tart! If you’d prefer a sweeter version, juice just half of the lime.) Shake vigorously or mix well.
