If there’s one food we can’t get enough of, it has to be the humble avocado.  We eat avocados blended in our morning smoothie, chopped up over our lunch-time salad, and smashed into a quick guac for #TuesdayTaco night.  You’ve got to agree… whether it’s added to savoury or sweet foods, the avo simply ups the food game!

Then we heard something that stopped us in our tracks.  There is a new side dish out there taking the world by storm, and if it wasn’t for the title of this post you’d never guess it!  AVOCADO RICE!  Wtf is avocado rice?  To be perfectly honest, we didn’t know what it was either.  That is, until we did a little research and found out that it’s a delectable side dish made from mixing together avocado and your favourite type of rice (be it brown, white, or even cauliflower).  Since avocado is basically in every rice bowl we ever make, we already knew we’d like the taste.

The health benefits of avocado are no secret, and results from the National Health and Nutrition Examination Survey show that those who regularly eat the fruit are much healthier than those who omit it from their diets. Why is that, you may ask? Well, according to research, the fruit increases your levels of nutrients, lowers your risk for heart disease and diabetes, and gives you less belly fat and more “good” cholesterol.  Rice, on the other hand, has its own benefits: It’s good for your skin, aids in regulating your blood sugar, and even helps keep your body energised. When the two superfoods combine, it’s like a match made in heaven.

1 large head cauliflower, florets removed
1 tbsp. avocado oil
1 cup diced onion
3 cloves garlic, minced
1 1/2 small-medium avocados
1 jalapeño, minced
1/2 cup coriander, finely chopped
2 tbsp. lime juice
Salt and pepper, to taste


Cook homemade (or frozen) cauliflower rice to start this avocado rice recipe.

Fancy up the rice by mixing in garlic, onion, lime juice, avocado, and jalapeño.

Garnish with coriander.
